This was a really delicious meal, that comes to us from “Pinch of Yum.” I did make a few changes. In brief, I added a lot more garlic to the cauliflower mash than the recipe called for. I also cooked it longer, and ended up using my immersion blender to get the creamy smooth texture. Next time I’ll use less cauliflower however, because this recipe makes A LOT.
For the kale I avoided the bacon fat all together. I used olive oil, cooked the garlic in the oil first until it was aromatic, then added the kale. I covered it and cooked it for 5-7 minutes to tender and then turned off the heat and tossed it with 2 tablespoons of white wine vinegar.
This is a recipe my family really loved and one that I’ll make again.
