It took me two tries to get this recipe right. Firstly I used real cacao powder, both roasted and not roasted, instead of cocoa powder like the recipe calls for. It’s healthier with no added sweeteners. The first time I made this, the chocolate and honey separated as it set in the refrigerator. That made the chocolate itself a little bitter, but the pieces with honey on them were delicious. The second time I made this I did two things differently. First, I mixed the coconut oil/cacao mixture with the honey for longer on the double boiler whisking constantly. Second, I poured the hot mixture into silicone candy forms to set in. That way if the chocolate separated from the honey it was all contained. They didn’t separate this time, and truly this was some of the best chocolate I’ve ever had. The healthiest as well!
