This hearty, bean-free Slow Cooker White Chicken Chili is just what you need to ward off winter’s chill (Includes Instant Pot & Stovetop directions, too) I dream of chili No kidding. It has to be one of my most favorite foods. I just love how versatile it is and how everyone – EVERYONE – has their own idea of what ‘chili’ should be. Some like beans, others don’t. Some like big hunks of meat and others like theirs heavy on the veg. Some like it hot, some like it mild. And you’ve even got the red versus white thing going
I made this on a particularly busy day when my husband was flying off for business. The irony being that the nexus of all Mexican-influenced dishes in our family comes from him. That I was making a Mexican chili for the rest of us was a surprise.
Even more surprising that every one of my kids has seconds. This recipe was inspired and truly delicious. I was worried the coconut would be overpowering. It was a nice compliment instead.
He’s already asked me to make this recipe again, and I see this chili in our very near future and regular stable of recipes.
