This recipe was one of those symphonies of simplicity and perfection. Unfortunately we had to use frozen scallops but were still pleasantly surprised by this one.

I did substitute olive oil for ghee with this one, and served it with sauteed kale and mashed potatoes. Definitely a meal to be had again and again.
