I love lasagna, who doesn’t? But I’m gluten-free, and dairy-free and so haven’t been able to enjoy lasagna for a long time. Until now! I finally found a recipe that’s grain and dairy free, and it doesn’t leave me missing the less healthy ingredients AT ALL.
I will add that my husband and children do eat dairy, and so I served ricotta and shredded cheese on the side for them. I also swapped out the beef in this recipe for ground elk. Elk is a sweeter, leaner meat which pairs well in tomato dishes. It tastes like a finer quality beef, it’s just leaner. So you have to cook it low and slow. And none of the antibiotic/chemical grossness you get with regular beef. Win!
